Winemaking and ageing

Red wine
The vinification process is done in stainless steel vats with temperature control, pre-fermentation maceration and micro-bubbles. The wine is aged in oak barrels for 12 to 15 months (Prestige for 18). A third of the barrels are renewed each year.

White wine
The white wine is racked in stainless steel vats at low temperature and then vinified and aged in new oak barrels on fine lees, with frequent “batonnage” (stirring of the lees).

  • Grape varieties: 40% Cabernet Sauvignon, 40% Merlot and 20% Cabernet Franc
  • Harvest: hand-picked at optimum ripeness, extremely rigorous selection criteria
  • Vinification: in stainless steel vats with temperature control, pre-fermentation maceration and micro-oxygenation
  • Duration: 4 weeks
  • Ageing: in oak barrels for 18 months

RED TRADITION

  • Soil: on gravelly hillsides and sandy clay soil
  • Appellation: Pessac-Léognan
  • Area: 13,65 hectares
  • Production: 100 000 to 120 000 bottles
  • Grape varieties: Merlot, Cabernet Sauvignon, Cabernet Franc and Petit Verdot
  • Harvest: hand-picked and mechanically picked at optimum ripeness, extremely rigorous selection
  • Vinification: in stainless steel vats with controlled temperatures, maceration and micro-oxygenation
  • Duration: 4 weeks
  • Ageing: in oak barrels for 12 to 15 months

WHITE

  • Soil: on gravelly clay hillsides and sandy-Graves
  • Appellation: Pessac-Léognan
  • Area: 3 hectares
  • Production: 14 000 bottles
  • Grape varieties: 70% Sauvignon and 30% Sauvignon Gris
  • Harvest: hand harvested with successive sorting procedures, and extremely rigorous selection criteria
  • Vinification: in barrels
  • Duration: 3 weeks
  • Ageing: aged on lees in oak barrels with lees stirring

Commercialization

The commercialization is divided as follows: 20% wine traders, 10% direct export, 20% traditional sector (wine shops, restaurants and wholesalers) and 50% to individuals (sales at the property and on fairs).

Wine fairs

Every year, we participate in numerous wine fairs, here are some of them:

 

1st semester: Rennes, Clermont-Ferrand, Vertou, Strasbourg, Limoges, Bordeaux, Publier (Evian), Paris (Maxim’s The Boat and Porte de Champerret).

 

2nd semester: Brest, Dunkerque, Lille, Lyon, Marseille, Paris (Porte de Versailles and Maxim’s The Boat).
